Piedmont rewards patience. Nebbiolo is pale in the glass and then anything but on the palate: tar, rose, dried cherry, and a tannin that needs years or needs food. Barbera is the region’s weeknight answer — bright acid, no tannin to speak of, and it makes everything on the table taste better.
